What is Gluten?

A. Gluten (Latin for Glue) is a combination of two proteins gliadin and glutenin found in ALL forms of wheat (including semolina, spelt, kamut, einkorn, faro and durum), rye, barley and triticale.

Where is Gluten found?

A. Aside from the obvious foods like bread, pasta, pasty and beer, gluten is the most common source of a preservative and is most likely found in items that are packaged and required an extended shelf life. For example, canned or packaged food, hair products, toothpaste, make up and medications to name a few. A. All of GNI's Products are baked in a 100% Gluten Free Bakery in Escondido, California, U.S.A. Our Breads are Soy Free, Nut Free, Tree Nut Free, Corn Free, Dairy Free, Shellfish Free and of course Gluten Free.

Where can I find your products?

A. We distribute our Gluten Free Bread to Major Market, Jimbo's Naturally, Keils Market, Whole Foods, Frazier Farms, Cream of the Crop, Sprouts - Temecula, Ramona Family Natural, Legoland, Seaworld, Petco Park, Aviara Four Seasons, La Jolla Hilton Torrey Pines, Healthy Creations, Ki's Restaurant and Pepper Tree Cafe. We are always adding to the list. If you would like to request a store near you, let us know.

Do you ship your products?

A. We do ship GNI Products all over the Nation. Our Gluten Free Baked Goods require overnight delivery or in cooler months we can ship 2nd day to ensure optimum freshness.

What is the shelf life of your products?

A. GNI Bread and Baked Goods will last up to 5 days at room temperature and stays fresh for 3 weeks if refrigerated, 3 months in the freezer. GNI products thaw with out any adverse affects.

Do you offer more than Gluten Free Bread?

Gluten Not Included, Inc. is a full service bakery, the difference is we do it ALL Gluten Free. We have had great success in creating many baked goods. We offer everything from bread to birthday cakes and pizza crusts to burger buns and many things in between like pie crust and croutons. We are always adding to the list.
